Anatomy of the development of a cookie, Part 3



Results from the taste testing are coming in. All of the cookies appear to have shipped well. We haven’t had any complaints about stale cookies yet and this is 3 days out now. I’m encouraged.

I thought that I had to go to the health department but after investigating I found that I had to go to the Department of Environmental Health. A really nice woman helped me and after discussing my bars and cookies thought that I should open a store front. I’m not sure that I need a store front with only 3 types of cookies and 1 bar but I shouldn’t be so quick to say it won’t happen. She gave me a book with the regulations that I need to review.

Next I’ll go to the USDA and FDA but before that I’ll need to find a kitchen to bake the goods. A friend at Trader Joe’s gave me two names of people who may be able to lead me to a kitchen, perhaps one of theirs. In the meantime I need to figure out a name and packaging. The name I thought of “Aunt Chris’ Cookies” is similar to another name so now I must start over.
