More Work on Almond Product

Developing a new product is hard work. As I reported yesterday I need to develop a product using almonds that Nate can sell his local farmers market.

Yesterday I made some great almond bars but I needed to make the bars again using a different combination of almond just to make sure the recipe was right. I used more almond product but wasn’t happy with the new bars; too gooey. I liked the flavor though.

Back to my original recipe but now double the batch to see if the recipe would work in larger quantities. I made the bars but we found them to be very mild next to the ones I’d made earlier. And they had a gooey center, too gooey, it stuck in our teeth.

Yesterday we’d used some whipping cream on top but knew but that would not market well. We thought that maybe chocolate drizzled on top would be good. Today I was out and bought some chocolate chips for cookies and for melting for the bars. Well the chocolate didn’t melt and pour, it was soft but not a nice drizzle design. Then we tasted it, not good; it overwhelmed the bars. OK so much for that idea.

This batch plus some of the bars I made this morning will go to work with Dale tomorrow. His co-workers are use to being a guinea pig for me and don’t complain. I’ll have Dale ask for their opinions but usually they just gobble everything down before they can give an opinion.

Tonight I was going to also make some chocolate chip cookies using almond meal instead of flour. I couldn’t find my grandmother’s cookie recipe anywhere. I looked in some cookbooks and found a similar recipe and started on it but saw that I was out of brown sugar. Off to the store for the brown sugar and at least it was on sale.

I came home and started the cookies again but soon saw that I was out of Baking Soda, 1 teaspoon of it to make matters worse. I text messaged our neighbor but they were out. Finally it was after 10pm and I said forget it, I’ll try the cookies tomorrow.

Tomorrow is another day, another day for almond bars. I think that I’ll make another pan of bars but bake them longer. Then I’ll run back to the store for baking soda so that I can make some cookies.
